Dr. Anjum Ayoub

Assistant Professor-I

Dr. Anjum Ayoub is an accomplished academic and researcher currently serving as an Assistant Professor-I in the Department of Food Technology, School of Bioscience and Technology at Galgotias University, Greater Noida. He holds a Ph.D. in Food Science & Technology from Sher-e-Kashmir University of Agricultural Sciences and Technology, Jammu (SKUAST-J), where he conducted pioneering research on the optimization of foam-mat freeze drying for the development of protein-rich extruded products from persimmon (Diospyros kaki) and Amlok (Diospyros lotus). His doctoral work was supported by the prestigious CSIR Senior Research Fellowship (SRF). With a strong academic foundation, Dr. Ayoub also holds an M.Tech. in Food Processing & Technology from Gautam Buddha University, where he graduated with Distinction and ranked among the top three students in his cohort. His master’s thesis focused on the development of a portable ohmic heater and its application in the physico-chemical analysis of fruit juices—a project that later culminated in a granted patent. Dr. Ayoub brings over and above 3 years of teaching and research experience at the university level, having previously held faculty positions at RIMT University, Punjab and SKUAST-Jammu. He has taught a wide range of undergraduate and postgraduate courses across disciplines including Food Technology, Nutrition & Dietetics, Biotechnology, Agriculture Engineering, and Clinical Nutrition. His subject expertise includes Food Microbiology, Heat & Mass Transfer, Food Packaging, Human Nutrition, and Advanced Food Science.

A prolific researcher, Dr. Ayoub has published extensively in peer-reviewed national and international journals, many of which are UGC-Care listed, Scopus-indexed, and have high NAAS ratings. His research spans food engineering, extrusion technology, food fortification, nutraceuticals, and sustainable food packaging. He is also a granted inventor of three patents in food processing innovations, including a portable ohmic heater, a food freshness testing device, and a biopolymer-based food preservation container. Dr. Ayoub has been recognized with several awards and fellowships, including the Young Scientist Award (2021), Best Ph.D. Thesis

Award (2022), Best Oral and Poster Presentation Awards, and the TEH-AC Scholarship for doctoral research at Prince of Songkhla University, Thailand. He is an active member of professional societies such as the Agricultural & Environmental Technology Development Society (AETDS) and the Society of Bioinformatics and Biological Sciences. In addition to research and teaching, Dr. Ayoub has guided 7 M.Tech and 4 M.Sc. students in their thesis work, developed laboratory manuals for engineering subjects, and contributed as an editorial board member for reputed journals. He is skilled in advanced analytical instruments and statistical software, and is committed to fostering student development, academic excellence, and innovative research in food science and technology. Dr. Ayoub is a dedicated educator, innovative researcher, and proactive academic contributor who strives to integrate industry insights with academic rigor to prepare future-ready professionals in the field of food technology. He also actively contributes to departmental administration through various roles including NAAC Coordinator, Examination Coordinator, Event Coordinator, Internship & Placement Coordinator, Alumni Coordinator, Social Media Coordinator, and member of the Academic Monitoring, Board of Studies, Student Disciplinary, and Student Grievance Redressal Committees.
